WINE PROFILES

'25 signature series savuignon blanc

$28

ABV: 13.1%     |     RS: 0.32%     |     pH: 3.32     |     TA: 5.55

AVA: Cape May Peninsula

Aging: Stainless Steel

Varietal Composition: Sauvignon Blanc 100%

Harvest: Sept. 2-3, 2025

Bottling: April 30, 2026

Cases Produced: 81

The nose opens with a vibrant burst of citrus — lemon, lime, and grapefruit — layered with an exotic tropical medley of passionfruit, guava, papaya, and prickly pear, complemented by hints of gooseberry, fresh-cut grass, and a stony, flinty minerality. On the palate, the tropical and citrus notes carry through beautifully, with grapefruit, guava, passionfruit, and gooseberry framed by a refreshing saline quality that adds depth and complexity. The mouthfeel is crisp and lively on entry, building to a surprisingly weighty mid-palate with lush, generous fruit that lingers through a clean finish. Drink now.

Our SS Sauvignon Blanc is a natural companion to fresh, bright, and herb-driven dishes. Its crisp acidity and tropical fruit character shine alongside a Citrus & Chèvre Salad, while the wine’s saline minerality makes it a perfect match for roasted cauliflower with capers and a vibrant chicken piccata. The lush mid-palate weight holds its own against a creamy vegetable risotto, and the wine’s lively fruit notes pair beautifully with a selection of soft cheeses.

The Sauvignon Blanc fruit was hand harvested, then crushed, destemmed, and passed through the DTMA before going straight to press. This gentle process helps liberate the full spectrum of flavor and aromatic compounds locked within each berry.

The 2025 vintage proved to be an exceptional one overall. The season opened much like 2022 — hot and dry, with fruit tracking along a faster-than-normal ripening curve. As the season progressed, temperatures moderated, allowing for excellent flavor development across the vineyard. Significant diurnal temperature swings became a defining characteristic of the vintage, producing morning dew nearly every day. While a few rain events occurred throughout the season, none posed any meaningful threat to fruit quality. Most varieties thrived, and the Sauvignon Blanc was no exception — delivering outstanding fruit development with remarkable depth of flavor.

'25 signature series viognier

$28

ABV: 13.5%     |     RS: 0.14%     |     pH: 3.47     |     TA: 4.95

AVA: Cape May Peninsula

Aging: Stainless Steel

Varietal Composition: Viognier 100%

Harvest: September 6, 2025

Bottling: April 30, 2026

Cases Produced: 89

The nose is beautifully aromatic and expressive, offering a lush bouquet of ripe pear, Macintosh apple, apricot, and mango, delicately interwoven with floral notes of orange blossom, honeysuckle, and rose, and rounded out by a soft touch of honey. On the palate, the wine takes an intriguing turn, delivering vibrant and zesty notes of fresh ginger, orange oil, lemongrass, and Meyer lemon that add brightness and complexity. The mouthfeel is classically Viognier — rich and silky on entry with a luscious, oily texture that gracefully gives way to a refreshing and pleasant acidity on the finish. Drink now.

Our Viognier is a wonderfully versatile companion at the table. Its silky texture and floral aromatics make it an elegant match for soft cheeses such as brie or chèvre, while its bright citrus and spice notes find a natural harmony with the warm, aromatic flavors of chicken korma. For a more casual pairing, a grilled cheese with orange marmalade mirrors the wine’s honeyed, citrus-driven character beautifully.

The Viognier was hand harvested and held in a cool environment overnight to lower the fruit temperature before being whole-cluster pressed the following day. This chilling process helps minimize abrasive phenolic extraction from the skins, preserving the wine’s delicate aromatics and clean, fresh character.

Significant diurnal temperature swings became a defining characteristic of the vintage, producing morning dew nearly every day. While a few rain events occurred throughout the season, none posed any meaningful threat to fruit quality. Most varieties thrived, and the Viognier was a particular standout — delivering an abundant crop with excellent phenolic development, performing exceptionally well compared to previous vintages.

'25 Signature Series cabernet sauvignon rosé

The nose is fresh and inviting, leading with bright notes of strawberry, watermelon, and cherry, accented by tart rhubarb and pomegranate, with a lovely lift of lemon and a delicate hint of elderflower. On the palate, the wine delivers a clean and focused expression of watermelon, cherry, and pomegranate, with a refreshing vibrancy that carries through to the finish. The mouthfeel is crisp and fruit-forward, making for an effortlessly enjoyable and thirst-quenching wine. Drink now.

Our Cabernet Sauvignon Rosé is a bright and versatile addition to the table, perfect for warm-weather dining. Its crisp fruitiness and fresh berry character are a natural match for a pomegranate and watermelon salad, echoing the wine’s own vibrant flavors. The wine’s lively acidity and fruit-forward personality stand up beautifully to the rich, bold spices of barbacoa tacos, while its refreshing character makes it an ideal partner for a chilled gazpacho. Drink now and enjoy at its liveliest and most refreshing.

This Cabernet Sauvignon Rosé was hand harvested from a block affectionately known as “Cab Sauv Pumpkin” — named for its location on a former pumpkin patch on the estate. The fruit was whole-cluster pressed, and residual sugar was intentionally kept slightly higher on this vintage to maintain balance, keep alcohol in check, and preserve the wine’s vibrant, fruit-forward character.

As harvest season drew to a close, however, increased rainfall began to influence our picking decisions. For the Cabernet Sauvignon Rosé, this meant harvesting slightly earlier than ideal — but the result speaks for itself, yielding an exceptionally fruit-forward and vibrant rosé that we are very proud of.

'23 Signature Series syrah

$46

ABV: 11.3%     |     RS: 0.02%     |     pH: 3.82     |     TA: 5.4

AVA: Cape May Peninsula

Aging: 19 months Neutral French Oak

Varietal Composition: Syrah 100%

Harvest: September 22, 2023

Bottling: June 16, 2025

Cases Produced: 49

The nose is complex and captivating, opening with signature notes of white and black pepper alongside a rich array of dark and red fruits — blackberry, fresh cherry, blueberry, and strawberry. Savory undertones of olive tapenade and fresh rosemary and thyme add an elegant herbal dimension, while hints of vanilla and espresso lend a subtle, inviting depth. On the palate, white pepper leads the way, followed by layers of strawberry and blueberry framed by notes of tobacco and cacao that add richness and complexity. The mouthfeel is beautifully balanced, with well-integrated acidity and oak-derived tannins that fill out the mid-palate and carry through to a long, satisfying finish. Drink now or cellar for up to five years.

Our Syrah is a bold yet refined choice at the table, equally at home with casual fare and more elevated dining. The wine’s savory, peppery character and dark fruit complexity are a classic match for an herb crusted lamb, while its earthy, herbal undertones make it a natural alongside a charcuterie spread. The rich cacao and tobacco notes on the palate pair beautifully with the simplicity of a Cacio e Pepe, and the wine’s fruit-forward personality brings a lovely contrast to the bright, fresh flavors of a Margherita pizza.

This Syrah was aged for 19 months in neutral French oak barrels. As a fun winemaking experiment, one barrel was kept sulfite-free throughout the aging process to observe how it developed differently from the rest. It was ultimately sulfited and blended back with the other barrels prior to bottling.

The 2023 vintage presented its share of challenges. Above-average rainfall brought with it significant disease pressure throughout the season, with some varieties emerging unscathed while others struggled. Syrah, which can be temperamental in wetter conditions, was no exception — requiring careful attention in the vineyard to navigate the season’s difficulties. Despite those challenges, the fruit that made it to the cellar produced a wine of exceptional intricacy and nuance, a true testament to the resilience of the vintage.
