This dry Riesling opens with aromatic intensity, offering a vibrant bouquet of apple, pear, cantaloupe, white peach, apricot, and apricot jam, accented by hints of lemongrass, pineapple, and Meyer lemon. On the palate, it is crisp and lively, with bright acidity at the forefront and layered flavors of apple, lemon-lime, nectarine, and fresh golden apple. The wine is light to medium in body, with a clean, refreshing finish and little to no perceptible tannin. While it is already enjoyable in its youth, we recommend allowing it to evolve further in bottle, with optimal drinking projected around August to September 2025.
The wine’s bright acidity and stone fruit notes complement pad thai’s sweet, tangy flavors and balance its richness. Crisp and clean, this Riesling refreshes the palate and highlights the dish’s herbs, lime, and spice for a vibrant, well-rounded pairing.
For this vintage, the Riesling fruit was processed using a new addition to our facility: the DTMA (Della Toffola Maceration Accelerator). This innovative equipment enhances aromatic and phenolic extraction from the grape skins without requiring extended skin contact. By gently breaking down the grape material at the cellular level, the DTMA allows us to achieve greater flavor and aroma complexity while streamlining processing time, preserving freshness, and minimizing oxidation. This technique supports our goal of crafting a Riesling that is both expressive and precise.
The 2024 growing season was marked by drought-like conditions during the early stages of vine development, contributing to reduced vine vigor and smaller berry size. As harvest approached, the weather transitioned to more moderate temperatures, with pronounced diurnal shifts following veraison. These wide temperature swings between warm days and cool nights promoted excellent flavor development while preserving acidity. The resulting fruit showed notable concentration of aromas and flavors, elevated natural acidity, and lower pH levels — a combination that supports both freshness and ageability in the finished wines.

This Albariño opens with an expressive nose of lemongrass, orange blossom, papaya, honeydew, nectarine, lemon zest, and a subtle saline/briny note. On the palate, it is crisp and bright, showcasing layers of lemon, honeydew, mandarin, and lemongrass, with accents of honey and beeswax. The wine has a lush texture around the front and rear palate, with a lighter mid-palate, creating an elegant, dynamic structure. A distinctive saline minerality carries through the mid-palate into a clean, lingering finish. While enjoyable now, this wine will benefit from additional bottle age to allow its aromatic and flavor components to fully harmonize.
Albariño’s bright acidity, citrus notes, and saline minerality make it a natural partner for mussels and other shellfish. Its hints of lemon zest and lemongrass complement classic preparations with white wine, garlic, and herbs. A clean, harmonious pairing that highlights the coastal essence of both wine and dish.
The Albariño fruit was crushed and destemmed prior to pressing, rather than undergoing a traditional whole cluster press. This approach allows for increased extraction of aromatics, flavor compounds, and phenolics from the grape skins, resulting in enhanced texture and complexity in the finished wine. By carefully managing this process, we aim to preserve the variety’s vibrant acidity and saline character while elevating its aromatic depth and mid-palate richness.
Drought-like conditions in 2024 led to reduced canopy vigor and smaller berries with lower water retention, resulting in greater concentration of flavor and aroma. Moderate temperatures and significant diurnal shifts after veraison further preserved acidity and enhanced ripening. The fruit showed elevated acidity, lower pH, and excellent varietal expression—ideal for producing a bright, focused Albariño.

This Cabernet Sauvignon offers a richly layered nose of black cherry, plum, dark chocolate, vanilla, and cedar, accented by complex baking spices such as clove, cardamom, ginger, and star anise. On the palate, notes of cocoa nibs, espresso, and gingerbread are complemented by baked cherry, raspberry, and a subtle hint of dried chili flakes. Medium-full in body, the wine presents medium-plus tannins, that are oak-driven up front with persistent grape tannins that carry through the finish. Bright acidity adds lift and balance to the wine’s generous structure. While enjoyable now, further bottle aging is recommended, with optimal development anticipated in the coming years.
The wine’s bold tannins and dark fruit depth pair beautifully with a grilled ribeye, where the marbled fat balances the structure and enhances notes of cocoa, spice, and black cherry. A classic, full-bodied match.
This Cabernet Sauvignon was aged for 26 months in oak—significantly longer than our standard red wine barrel aging program. After initial evaluations, the winemaking team determined that extended maturation would enhance the wine’s integration and overall complexity. The barrel program consisted of 84% neutral oak to preserve varietal character, with 16% new oak used to impart subtle layers of spice, structure, and depth. The result is a well-structured, refined wine with polished tannins and balanced oak influence, offering both immediate appeal and excellent aging potential.
The 2022 vintage stands out as one of the most exceptional in Hawk Haven’s history. Warm temperatures and minimal rainfall during harvest created ideal conditions for ripening, resulting in optimal fruit maturity. Harvest occurred 2–3 weeks earlier than historical averages, concluding on September 30th—well ahead of the typical late October to early November timeframe.
The favorable growing season, combined with the structure provided by the V-Row trellising system, produced fruit with concentrated flavor and substantial tannin. In response, we extended the wine’s barrel aging to help refine and integrate its bold structure. The result is a complex, aromatic wine with softened tannins, deep flavor concentration, and strong aging potential.

The Q Bordeaux Blend delivers a rich and complex experience with a nose of leather, oak, baking spices (nutmeg, cinnamon), vanilla, and dark and red fruits like plum, blackberry, and raspberry jam, accented by violet, musk, chocolate, and cedar. On the palate, bold oak leads into blackberry, plum, vanilla, clove, and heavy baking spices including cinnamon and cardamom. It has a lush medium-plus body with abundant mouth-drying tannins from oak and grape, balanced by medium acidity. Full-bodied and tannic, this wine shows excellent aging potential and is best revisited in six months as it continues to develop.
This rich, full-bodied Bordeaux blend pairs beautifully with roasted game meats like venison or duck. The wine’s bold tannins and layered spices complement the savory, robust flavors of the meat, while its dark fruit and vanilla notes balance the dish’s earthiness and char. The medium acidity also helps cut through the richness, making for a truly satisfying pairing.
This vintage of our Bordeaux blend is composed of 44% Cabernet Sauvignon, 29% Merlot, 15% Cabernet Franc, 8% Petit Verdot, and 4% Malbec. It was aged for about 18 months in a mix of new and neutral French oak barrels, which enhances the wine’s complexity and structure. This blend allows us to combine the strengths of each grape variety, creating a balanced and well-integrated wine with depth and richness.
The 2022 vintage at Hawk Haven stands as one of our finest on record. Favorable weather conditions, characterized by minimal rainfall and sustained warm temperatures during harvest, facilitated optimal fruit ripening. Consequently, harvest commenced and concluded 2 to 3 weeks earlier than the historical average, finishing on September 30th rather than the customary late October to early November period. The blending process for Q enabled us to select the highest quality lots, culminating in an exceptional red blend that demonstrates remarkable concentration, balance, and aging potential.
