The 2023 Hawk Haven Estate Merlot is expressive and oak-forward in its youth, opening with notes of vanilla, clove, star anise, and toasted oak layered over ripe plum, strawberry jam, elderberry, and currants. Subtle hints of black peppercorn, sundried tomato, oregano, and dark chocolate add savory depth and intrigue. On the palate, red and black fruits continue alongside warm baking spices — clove, star anise, and a touch of Chinese five spice — creating a richly spiced profile. Medium-plus in body with fresh, balanced acidity, the tannins are rounded and beginning to melt, while a gentle warmth lingers on the finish. With additional bottle age (five+ years), this Merlot will further integrate and reveal even greater complexity.
This Merlot pairs beautifully with dishes that mirror its depth and warmth. Earthy mushroom risotto highlights its savory spice and oak tones, while filet mignon complements the wine’s ripe fruit and rounded tannins. For something heartier, barbecue or a rustic skillet lasagna bring out its plum, spice, and subtle cocoa notes, making each bite and sip feel layered and satisfying.
Aged for 18 months in neutral French oak, allowing the fruit and spice character to shine while gaining subtle structure and balance.
The 2023 growing season began hot and dry — ideal conditions for establishing strong fruit development and concentration early on. As harvest approached, however, excessive rainfall during red varietal picking presented challenges and slowed the progression toward full physiological ripeness. Fortunately, our estate Merlot, which consistently ripens earlier than many of our other red varieties, was largely harvested ahead of the heaviest impacts. Despite the season’s hurdles, the fruit remained balanced and expressive, resulting in a rich, well-structured wine that reflects both resilience and site character.

The 2023 Hawk Haven Estate Cabernet Sauvignon opens with an aromatic bouquet of cherries, plum, boysenberry, cranberry, and blackberry layered with bay leaf, cedar, vanilla, cinnamon, clove, and a hint of bergamot. On the palate, vibrant red and black fruits are complemented by notes of tobacco, leather, vanilla, cardamom, and subtle herbal undertones, adding depth and structure. Medium-plus in body with rounded yet present tannins, the wine carries balanced alcohol and a firm, lingering finish. Built for evolution, this Cabernet will continue to develop beautifully over the next five or more years.
This Cabernet Sauvignon pairs beautifully with richly flavored, savory dishes. A NY strip steak topped with herb butter enhances the wine’s dark fruit and cedar notes while softening its firm tannins. Venison with a berry reduction mirrors the wine’s blackberry and plum character, with the game’s earthy depth highlighting its herbal and spice nuances for a balanced, elegant pairing.
Aged for 17 months in neutral French oak, allowing the Cabernet’s varietal character and structure to remain at the forefront while gaining subtle texture and integration from barrel maturation.

As harvest approached, however, excessive rainfall during the red varietal window created challenges and slowed the progression toward full physiological ripeness. Cabernet Sauvignon, which naturally requires a longer hang time than many of our other varieties, felt the impact of the late-season rains more than most. Even so, careful vineyard management and selective harvesting allowed the fruit to persevere, resulting in a beautifully elegant expression of Cabernet Sauvignon that reflects both the character of the vintage and the resilience of the site.

The 2023 Signature Series Cabernet Franc opens with vibrant aromas of raspberry and strawberry layered with black cherry, clove, white peppercorn, and cinnamon. Savory nuances of roasted red pepper, dried chili flakes, and a distinct blue slate minerality add complexity and intrigue. On the palate, bright red fruits — raspberry, strawberry, and cranberry — are framed by notes of white pepper, thyme, basil, and warm spice. Medium-bodied with firm structure and medium-minus alcohol, the tannins linger subtly, with oak influence currently more prominent than grape tannin. With an additional six months of bottle age, the wine will soften and open beautifully, and can continue to evolve gracefully for three to five years.
This Cabernet Franc pairs beautifully with savory, comfort-driven dishes. Creamy Taleggio cheese highlights the wine’s spice and softens its tannins, while roasted red pepper dip echoes its subtle herbal and peppery notes. Classic French onion soup complements the wine’s savory depth and gentle oak influence. For heartier fare, it’s a natural match with a well-crafted burger or a rich bolognese served over pappardelle, where the wine’s bright acidity and structure balance the richness of the dish.
