FIZZ Nouveau bursts from the glass with vibrant aromas of pomegranate, cranberry, strawberry, and raspberry, lifted by hints of apricot, lemon zest, clove, and a touch of vanilla. On the palate, this sparkling Pinot Noir rosé shines with juicy layers of strawberry, raspberry, peach, and pomegranate, balanced by bright notes of lemon and grapefruit and a subtle vanilla roundness. The mouthfeel is textured and zippy — clean, creamy, and beautifully structured — delivering both freshness and finesse. Crafted to be enjoyed in its youthful, energetic state, FIZZ Nouveau is a “drink now, don’t age” celebration in a bottle.

FIZZ Nouveau’s bright red-fruit character and lively sparkle make it a perfect match for festive, flavorful bites. Try it with soft cheeses like brie or triple cream, charcuterie with cranberry chutney, smoked salmon crostini, or roasted poultry with herbs and citrus. Its zippy acidity also pairs beautifully with holiday favorites—think glazed ham, beet and goat cheese salad, or anything topped with fresh berries. Light, vibrant, and versatile, it’s the bottle you’ll want on every table.

This wine is crafted for the second year from our older plantings of Pinot Noir. These established vines produce tighter clusters, offering a different balance and structure compared to our newer plantings, which yield looser clusters and naturally higher-acid fruit. Because the newer Pinot Noir block is better suited for our méthode champenoise sparkling program, the older vines have become the perfect source for FIZZ in recent years.

The 2025 vintage treated us well here at Hawk Haven. Like every growing season, it came with its share of challenges — but overall, many varieties delivered beautifully clean, high-quality fruit. The Pinot Noir we harvested for FIZZ was especially exciting: well-developed, vibrant, and impeccably clean… exactly what we hope for when crafting this wine.

The OA Petit Verdot opens with a deep, expressive nose layered with licorice, elderberry, vanilla, blueberry, and dark plum, lifted by herbal notes of sage, thyme, bay leaf, and lavender. Hints of peppercorn, chili spice, clove, tobacco, and black cherry add warmth and complexity. On the palate, it’s bold and concentrated, offering black currant, elderberry, plum, cherry, and blackberry jam, intertwined with savory sage, bay leaf, vanilla pipe tobacco, and spice. The mouthfeel is full-bodied, smooth, and well-rounded, with lush, layered tannins that linger long after each sip. Enjoy now for its richness and vibrancy, or cellar for up to five years to allow its structure and depth to further evolve.

This plush, full-bodied Petit Verdot shines alongside dishes that match its richness and depth. Try it with beef stroganoff, braised short ribs, herb-crusted lamb, or grilled ribeye with peppercorn sauce. Its savory herbal notes pair beautifully with mushroom ragu, rosemary roast chicken, or charred eggplant. For cheese, reach for aged gouda, blue cheese, or a strong cheddar. And don’t overlook dessert—this wine is surprisingly perfect with blueberry cobbler, blackberry tart, or dark chocolate truffles.

The 2022 OA Petit Verdot was harvested on September 24, 2022 from the Orley Ashenfelter Vineyard in Vineland, NJ, then brought to Hawk Haven for crush and fermentation. Afterward, the wine aged for 26 months in a mix of 20% new French oak and 80% neutral French oak, giving it depth and smooth tannins without overpowering the fruit. It was bottled on April 2, 2025 and has been bottle conditioning in our cellar. 

The 2022 vintage was arguably one of, if not, the best vintage we’ve seen at Hawk Haven, and this was also the case for the OA vineyard as well. There was a minimal amount of rain during harvest, and we had hot temperatures. We saw optimal maturity, and the fruit came in 2-3 weeks earlier than historic harvest dates. There are a few other wineries that purchase fruit from the OA vineyard as well. There was a late season tropical storm that they were calling for and like every threat of storm you have to weigh out how ripe the fruit is and what potential damage a large amount of rain could do to your fruit. This year we were the only vineyard to decide to harvest pre-potential storm. Thankfully we made the right decision at the right time because all the other wineries had to wait another 2 weeks to see grape chemistry to come back to where it was pre storm. Sometimes we do get it right and this year was one of those, and because of that we have this beautifully structured Petit Verdot. We allowed for extra aging in barrel to help soften those gritty tannins thus giving you a soft lush mouthfeel!

Expressive and perfumed, this Cabernet Franc opens with lifted aromas of raspberry, black cherry, herbs, and a touch of cedar and slate. The palate unfolds in a long, seamless progression of red berry fruit, espresso, cedar spice, and a hint of kalamata olive, carried by firm, focused tannins. Structured and savory with impressive length, this wine is vibrant now but will reward 5+ years of cellaring.

This expressive Cabernet Franc shines alongside herb-roasted lamb, char-grilled steak tips, or mushroom ragù over creamy polenta. Its savory notes also make it a natural match for roasted red pepper dishes, eggplant parmesan, or a simple plate of aged gouda and olives. For a cozy finish, try it with dark chocolate–covered cherries.

The 2022 Cabernet Franc from the Orley Ashenfelter Vineyard was harvested in two picks on September 24 and 29, 2022, then brought to Hawk Haven Winery for crush and fermentation. The wine matured for 18 months in oak, using a balanced mix of 36% new French oak and 64% neutral French oak to enhance structure without overshadowing its bright varietal character. It was bottled on May 6, 2024, marking the finish of a well-rounded, carefully guided aging process.
