This wine opens with an aromatic nose of lychee, melon, lemon, kiwi, rose, and a touch of honey. On the palate, it shows a vibrant mix of lychee, starfruit, dragonfruit, and even a hint of raspberry, layered with floral notes of rosewater and hibiscus, and subtle spice tones of ginger and clove. The mouthfeel is both oily and tart, creating a balanced texture that lingers. While already highly enjoyable now, it will only improve over the coming months. For the freshest expression, it is best enjoyed by April 2026, though it is expected to age gracefully for up to two years.

This wine’s exotic fruit, floral notes, and vibrant acidity make it a perfect match for bold, flavorful dishes. Try it alongside sweet and sour pork, chicken curry, or pad thai, the wine’s freshness and spice accents beautifully complement the sweet, savory, and aromatic elements of these dishes.

The fruit was carefully crushed and destemmed before passing through the DTMA (Della Toffola Maceration Accelerator), a process that enhances the extraction of delicate aromas and vibrant flavors from the grape skins.

In 2024, drought-like conditions during vine growth gave way to moderate harvest temperatures, with pronounced diurnal shifts after veraison. Smaller berries delivered concentrated flavors, higher acidity, and lower pH, while early-season warmth contributed abundant aroma precursors—now expressed in the wine’s vibrant bouquet and layered flavors.

Our Reserve Chardonnay opens with an inviting nose of crisp apple, ripe pear, tropical pineapple, coconut, and a hint of fresh almond. On the palate, layers of pineapple, coconut, and vanilla mingle with bright lemon-lime notes, creating both richness and vibrancy. A well-structured balance between weight and acidity gives this wine elegance and depth, while its character will continue to develop beautifully over the next two years.

This Reserve Chardonnay pairs beautifully with aged gouda, manchego, or gruyere, where the nutty richness of the cheeses complements the wine’s depth. For a savory-sweet match, enjoy it with honey-bourbon glazed salmon, which highlights the wine’s balance of weight and bright acidity.

Aged for 9 months in neutral French oak barrels

In 2024, drought-like conditions during vine growth gave way to moderate harvest temperatures, with pronounced diurnal shifts after veraison. The smaller berry size produced concentrated flavors, elevated acidity, and lower pH, setting the stage for exceptional quality. An early-season cold snap caused frost damage in one Chardonnay lot, while another suffered significant bird pressure, ultimately reducing yields. Though the vintage produced less fruit than anticipated, the quality was outstanding—resulting in this beautifully balanced, barrel-fermented Chardonnay.

'22 Signature series tempranillo

This Tempranillo greets the nose with layers of black cherry, plum, and black currant, lifted by notes of black pepper, licorice, clove, and allspice, and rounded with hints of walnut, vanilla, coffee, caramel, and a delicate floral touch. The palate shows vibrant cranberry alongside plum, licorice, cedar, oak, and dark chocolate, offering both depth and complexity. Firm, mouth-coating tannins—driven by generous oak influence—give the wine structure and longevity. Built to age gracefully for at least five years or more, this Tempranillo reveals its best character when decanted before serving.

This Tempranillo pairs beautifully with bold, savory dishes—its structure and depth complement the smoky char of grilled octopus, the richness of creamy mushroom risotto, and the layered flavors of paella. Each pairing highlights the wine’s balance of spice, fruit, and oak while enhancing its complexity at the table.

Co-fermented with Viognier skins. Aged in 66% new French oak barrels. Aged for 15 months in oak and 5 months in stainless steel. Aged with acacia wood for about 2 weeks pre-bottling.

The 2022 vintage was arguably one of the finest we’ve experienced at Hawk Haven. Warm, dry harvest conditions and minimal rainfall led to optimal ripeness, with fruit arriving two to three weeks earlier than historic harvest dates. While the season produced exceptional quality, it also brought unique challenges—most notably riper fruit than we typically see. Though not unfavorable, this required thoughtful adjustments in our winemaking approach. Tempranillo thrived in these conditions, developing beautifully concentrated color in the fruit that now shines through in the wine.

'22 OA Meritage

Varietal Composition: OA Cabernet Franc 63%, OA Cabernet Sauvignon 25%, OA Petit Verdot 12%

This wine opens with an inviting nose of plum, strawberry, raspberry, blackberry, delicate lilac, and a hint of fennel. On the palate, vibrant notes of strawberry, plum, red currant, fig, and a subtle touch of kalamata olive unfold with elegance. Well-balanced, structured tannins provide depth and support, promising graceful development over the next 8–10 years.

This wine pairs beautifully with a variety of flavors: its fruit-forward character complements the sweetness of chocolate-covered strawberries, while its structured tannins and acidity balance the richness of a smash burger with aged cheddar. Roasted pork with a rosemary rub highlights the wine’s savory and herbal undertones, making each bite and sip harmonious.

Blend: 63% OA Cabernet Franc, 25% OA Cabernet Sauvignon, 12% OA Petit Verdot.

Aged for 17 months in:
25% in New French Oak
75% in Neutral French Oak

The 2022 season was exceptional not only for Hawk Haven but also for Orley Ashenfelter’s vineyard in Vineland, NJ. Warm temperatures and minimal rainfall produced beautifully ripe fruit, translating into robust, expressive wines. This Bordeaux-style blend exemplifies the vintage’s quality, offering a complex bouquet of flavors and aromas, layered depth, and mouth-coating tannins that promise both richness and elegance.
